WVU Residential Dining Services

Foodservice

From August 20- September 28, 2012 I worked with the WVU Residential Dining Services to complete 240 hours of supervised practice in Food Service Management.

I worked with sports teams, observed counseling sessions, designed menus, provide floor wellness programming, and observed and worked in various facets of the food service facility. In addition, I completed a major project involving procuring local apples for the Evansdale Café.

Overall, this rotation was excellent in expanding my view of the role of the dietitian in an institutional and campus food service setting. Not only was I able to observe a dedicated and passionate nutrition professional, my preceptor allowed me to work beside her to provide nutrition education to students in various settings. This rotation was a helpful experience as I progress towards my RD credential.

Staff comments of performance included:

  • "very professional and showed a genuine interest in the material that I presented... a pleasure to work with!"
  • "self starter and had good initiative"
  • "Roanna... produced good work [and] connected well with the staff."

A portion of Food Service Management was covered at the clinical rotation of Monongalia General Hospital. For an overview of my work, go to my clinical page.
